Oreo Cheesecake Swirl Bars


Its absolutely no secret that I love to bake for people... specifically on occasions like birthdays! I've known N since we were teenagers and have been the best of friends for the majority of that time. We have celebrated many birthdays together, but for the past couple of years (separated by universities spanning close to a 5-hour journey apart) I have not been there to celebrate her birthday. Not to mention, N's specific dislike for having "too much fuss" surrounding her OR her birthday...



Of course such a sentiment does not go unpunished... especially when there is a 10-person whatsapp conversation involved. N made 'low-key' plans, some drinks and some food at Wahaca. WE had other ideas... armed with a giant badge, glittering cards and a VERY public-display-of-birthday-cake, we made sure that N was certainly made  a fuss of.


            ½ cup unsalted butter
            ¾ cup granulated sugar
            1 pack (8 oz.) cream cheese, room temperature
            ¾ cup icing sugar
            2 tsp. vanilla extract
            1 cup self-raising flour
            1 cup chocolate chips, melted
            2 large eggs
            1 ½ cups chopped Oreos

Preheat oven to 180 degrees Celsius and prepare an 8-inch baking pan by lining it with parchment paper. Melt the butter in a saucepan and add the sugar, whisking it vigorously until combined. Take this off the heat and allow to cool. Once cooled, whisk in the eggs, followed by the flour, melted chocolate, and oreos! In a clean bow, beat the cream cheese with the icing sugar and vanilla extract. Spread half of the cake batter in the prepared pan before spreading all of the cream cheese mixture over it. Distribute the remaining batter in dollops before swirling the two mixtures. Bake for 25 minutes and allow to cool completely. Cut up into bars and enjoy!!
